This wine was slowly fermented over a six week period in stainless tanks to produce an aromatic,well balanced sweet wine. |
Viticulture Notes |
Sourced from our own Waihopai vineyard, we had originally intended to harvest these grapes for our dry Riesling,however we realised there was an opportunity to produce something special as the grapes developed 'noble' botrytis during April slowly shrivelled until most of the crop consisted of small bunches of raisins. Once harvested and crushed they produced luscious sticky syrup that was carefully fermented to produce this wine. |
