Lawson's Dry Hills The Pioneer Sauvignon Blanc 2009

Tasting Notes
This wine has a wonderfully complex array of aromatic characters. Tropical and passionfruit flavours are immediately obvious, as the wine opens up in the glass, honeysuckle, lemon peel and gooseberry flavours become evident.
Food Match
Cold smoked salmon,sweet Spanish onion, capers. dressed with a little olive oil.

Winemakers Notes
The juice was cool fermented with specially selected yeast varieties to enhance the wines aromatic profile. Post fermentation a portion of barrel fermented Sauvignon Blanc from our own Chaytors Road vineyard was blended with the Woodward vineyard fruit to provide complexity and richness
Viticulture Notes
The viticulture was straight forward, with shoot thinning procuding moderate crop levels and leaf plucking providing additional sun exposure. The decision to pick was primarily on fruit flavours.
Cellaring
This wine will age nicely over the next two to three years.
