We are lucky enough to have a great site for growing Chardonnay on our Chaytors Road vineyard. Not a big block, but perfectly formed with stoney silt soils, planted with the Mendoza clone. These grapes are always small, high in acid and intensely flavoured. In the winery we barrel ferment the juice in new (25%) and older French oak barriques , before allowing the wine to go through malolactic fermentation. The resulting wine has a beautiful mixture of citrus, stonefruit and mealy characters with wonderful focus provided by the bright natural acidity.
